I selected these beans for their enticing and mouth watering green apple acidity that comes after the deeper notes of raisins, black tea and caramel.

When opening the packaging I could immediately smell a mix of raisins and currants, freshly dried and still warm from the sun, and this aroma transformed into the leading note in the silky smooth chocolate. The taste then moved onto winey note close to sherry wine, and finished as it said in the tasting notes - acid from green apples and caramel. I would say green apple covered in hot caramel straight from the pan (might attempt recreating this - yum!). Incredible.

About the beans

This cocoa is grown by Hacienda San José Real de la Carrera, one of the biggest privately-owned plantations in Central America, with an area of about 350 hectares. Hacienda San José also owns its own processing facilities in order to transform their cacao into semi processed products and chocolate.
