This chocolate bar is made from cocoa beans grown south of the Maracaibo basin in Venezuela. Sur del Lago translates as 'south of the lake'. I have paired this outstanding cacao with seaweed harvested in Devon by Ebb Tides. The salty, umami flavours in the seaweed complement the deep nutty and earthy notes of the cacao perfectly.

About the seaweed

Dulse (palmaria palmata) - Rich and smoky with a hint of spice. Dulse is a beautiful purple in colour, and can be found mid-beach.

Hand harvested by Ebb Tides, in Devon.
